Granton Edge knife that ensures perfect cutting time after time. The
scallop shape also gives you strength in the knife blade when needed.
This ensures that each knife performs perfectly for the longest possible
time by retaining a fine, razor sharp cutting edge for far longer than
a traditional plain edge knife.
High carbon content steel is used and the heat treating process combines
to leave you with a material that can be made extremely sharp and ideal
for many processes where accuracy and reliability are important.
A Granton Edge knife requires less steeling than ordinary knives whilst still
providing you with a perfect cutting edge. The edge also allows the
food to slide off the blade easier.
The blades are made from high-carbon stainless steel. This ensures
that the blade stays hard and keeps its edge.
The heat treatment process along with the grinding process is the real
secret of the knife. The steel must be strong enough to ensure that
the fine cutting edge is maintained for the longest possible timespan,
and when eventually the edge needs revitalising it can easily accomplished
using a sharpening steel.
Plain edge Granton knives are popular in the meat trade where their
strength, sharpness and durability are perfect for the heavy use that
these tradesmen employ every day. Again, the combination of a strong
heat-treated steel will ensure many years of service that you can rely
on. The knives are manufactured with over 400 years' experience in knife-making.
To compliment the Granton Edge there are the Granton Wavy Edge knives.
These knives provide 40% more cutting edge in contact with the item
compared with a traditional plain edge knife. The Wavy Edge provides
the perfect cutting edge profile for cutting items such as bread, gateaux
and pastry products. These knives are suited to, say, restaurants, canteens,
fast food establishments, etc, where a lot of use is required but when
you want something that will last and stand up to frequent usage. The
edge requires no/very little sharpening.
The Palette Knives are manufactured in the traditional way; by fully grinding the entire length of the blade, removing just the right amount of material to ensure the correct degree of flexibility is achieved.
These are available in various sizes - from small Artist's Palette knives all the way up to large 12" Catering Palettes.
The knives are available with 4 handle types - Regular, Ergonomic, Ergonomic Safety & Wooden.
All handles are designed to withstand rigorous sterilising and dishwasher use and do not present the potential health hazards that are frequently associated with other knives.
The regular handle was originally designed for holding the knife safely and comfortably for long periods.
The Ergonomic Handle was developed for the professional
user who uses knives all day. The handle shows a double tapered design,
ergonomically designed to reduce stress to the hand and wrist. Has a
contoured thumb platform and rounded blade back for added comfort.
The Ergo Safety Handle - this is a hybrid version of the
Ergonomic described above, but it has a much longer finger guard to
protect the fingers and reduce the chance of injury.

Traditional riveted wooden handles also continue to be available on many items.
Of particular use to trades where multiple knife use is required, Granton provides colour coding to the handles to make sure that each knife is used for the same type of product. It is vital, for example, in the catering trade that knives are not used inappropriately e.g. cutting raw and cooked meat with the same blade (cross contamination). Health risks are thus avoided yet your chefs are still able to rely on excellent tools with which to do their work.
Red for Raw Meat, Blue for Raw Fish, Yellow for Cooked Meat, Green for Salads or Fruit, Brown for vegetables, White for Dairy / Bakery items, Black for General Purpose Useage.
